A per-product table of default S-98 display planes. The product registry (ProductRegistry in EncDotNet.S100.Datasets.Pipelines) implements it from each registration's DefaultPlanes trait, so the table lives with the products rather than in a switch here.

Returns the default plane productSpec gives layerKind, or null when the product is unknown or gives that kind no plane.

layerKind string

The layer kind (e.g. "area", "s104.stations"), or null.
